There are quiet a few reserves & beautiful places here in the MIdlands. Have a look at the Wildlife Trust website, reservoirs for birds etc & beautiful open spaces (Long Mynd, Malvern, Sutton Park). Wyre Foreset is a particular favourite of mine.

not really my thing but mainly fallow at cannock with a small population of red and some muntjac.
not sure about the best place to see them but i have seen them numerous times in the section between chase rd and a34. there are signs requesting that visitors don't feed the deer so they must be fairly approachable at most times during the day. you may however, be better off contacting the rangers for advice, they are pretty helpful, or asking at he visitor centre.
