I find I get the best results by using ISO 400 with an f-stop between f8 & f13 with the camera set to continuous shooting and the focus set to AI servo.
Don't forget to add some positive exposure compensation to counteract the effects of the bright sky, I find that between +0.7 and + 1 is best for most conditions.
These are a few of my better in-flight images using these settings.

| | | Re: Birds in Flight for those that are learning there bird in flight i strongly reccomend starting with more controlled environments such as falconry displays
this was taken at the english school of falconry at shuttleworth
and/or feeding centres like gigrin farm in wales where this was taken
as this gives you lots of opportunity to gert to grips with the techiques of birds in flight without having to worry too much about field craft , camo etc.
