What are RAW files?

I've read a few of you discussing the pros and cons of RAW files. I've never come this type of file, is there a particular software you use to create these files or is it only certain cameras that use them?

RAW files (called NEF on nikons) are files of raw data from the sensor with no processing applied in camera - this allows more sensitive alterations to exposure , white ballance etc.

the option to outpout these files is generally found on all DSLRs and on most bridge cameras , however it is not available on the more basic point and shoots which are limited to jpeg only

Thanks for that, I didn't even realise I had the facility on my camera! I must read instruction manuals................................
