Someone gave me about 3lb of Victoria's the other day and, being short of time, I simply froze them whole. How do you go about making plum brandy, Garden Carpet? I regularly make sloe gin, but never tried anything with brandy. Reminds me that I must start to get the gin in too, the crop of sloes around here this year is the best for many a long year. |

Half pound of sugar to 1 lb peeled apples, cook till soft, add 2-3 tablespoonsful of mixed spice, 1 teaspoon ginger or cinnamon if liked. cook for 2/3 minutes and then put into warmed jars and cover. This will keep and is useful for a sauce on puddings, ice-cream etc. |

jaki | Verjuice - green unripe grape juice is very acidic and much nicer than vinegar, you could try any of the fruit vinegars apple, pear, plum or maybe wine vinegar Not knowing whether you are allergic to the malt or the acid it's hard to say what would be best. Personally I would try the Verjuice as it is wonderfully acidic.
Other than that try making your own NON malt vinegar
ps It does sound as tho you have problems with the acid type, how are you with lemons other and citrus fruits? Do you get a reaction from those? If not there is your answer!

| | | Re: Apple Chutney Another apple preserve = Apfelmus Simply hack the apples after peeling as you do not want Salicylic acid to flavour the Mus and slow cook to a mush, cool pour into glass and seal, a base for apple sauces and kids love it too. My stuff never lasted three weeks with three little daughters swiping it!
