I understand quinces are far too strong in flavour to use on their own for jam. I think you just add a little to apple jam and the quince flavour suffuses it.

The true Quince - Cydonia oblonga, is a large, yellow, pear-shaped fruit quite different to the fruit on Chaenomeles, (Japanese Quince), and is considered to be far superior in flavour having a very strong perfumed flesh. Traditionally it was made into either a candy or jam, small amounts were then added to dishes as a flavouring.
