Also couldn't find this tall grass/sedge thing

How come the leaves had a 'frosty' look about them? I've not seen them like that before.

| | | Re: Nightshade and grass ID I can see what looks like an estuary with boats in the background, which makes me think this is Hybrid Marram - x Calammophila baltica, a cross between Marram and Wood Small Reed. It is frequently used to help stabilise river-banks, sand-dunes etc.

Dorts. | You would correct, Wittering is home to East Head, a small spit that projects into a harbour, so your suggestion may be right. There was a lot Marram Grass around too.
