If you've got a lot you can cook and eat them. Scrape the roots and cook like parsnips.

It's slightly sweet, sometimes called vegetable oyster. My father used to grow it; we roasted it with meat like parsnips but I've seen it on restaurant menus with garlic etc. Fiddly but worth it.

When the flowers have died off. The roots are quite long so you need care when digging them up.
