Plant ID please

Lots of this plant around at present on my local grassland, also a lot of 'Cuckoo Spit' I think this is called, you can see on the plant itself - what actually is it though, I think it could be an insect larvae?

It is an insect larva. The nymph of a froghopper- the froth protects it. Called cuckoo spit because it's noticeable around the time that the cuckoo arrives in spring.
Another name is spital frog.

Think the plant might be a sorrel by the way.

Your plant is definitely Sorrel, most likely Common. No leaves to help identify.
