1. is Greater Tussock Sedge - Carex paniculata. (though yet to become a 'tussock'!).
2. Looks like False Fox Sedge - Carex otrubae.
3. Skullcap - Scutellaria galericulata.

Sorry, forgot to answer question on Sedges.
My only advice would be to get as good a book as you can.
Blamey, Fitter & Fitter's general flora, 'Wild Flowers of Britain and Ireland' have a good section on Sedges. Pub. A & C Black.
If you want to spend a bit more I would suggest you seek out Frances Rose's book , 'Grasses, Sedges and Ferns of the British Isles and noth western europe'. Pub. Viking .
There is a guide to Sedges by the BSBI that would also help.

Whats that all about?
Looks like it could be well worth scouring the second hand book shops.
Anyway, I'll keep looking.
