I took this pic of a 'Giant' Thistle. What is it actually called?

I'm not sure what you mean by giant, how big was it? It looks like Spear Thistle - Cirsium vulgare; however if it's really huge, I don't know.

It's a Woolly Thistle (Cirsium eriophorum)

EDIT - although it might be showing signs of hybridisation with a spear thistle at some point - I'm not sure though - wait for Tiggrx

Not too sure - I would have said Spear Thistle, but it doesn't look quite right. A hybrid with Woolly Thistle does occur rarely and it could be that.

Do you have any pictures showing more of the plant?
