| | | Banquet Suggestion Some of you may have read that John, Pete and I intend to camp on Saturday night and Pete will be bringing his stove. If it were left to me we would be having Heinz beans with mini sausages, and rice pudding for seconds, but I am sure you can come up with something a little more adventurous.
The drink is already taken care of - it will be beer and plenty of it |

| | | Re: Banquet Suggestion Here is something easy and warming to make which generally goes down well with blokes and kids cos it has lots of meat in it!
It can be made in advance or on the night in one pot.
Roughly chop one onion, one packet of bacon and one packet of sausages and fry in a little oil until cooked. Add two tins of baked beans and one tin of chopped tomatoes, stir well and heat through, season to taste, and voila!.
You can leave this simmering on a low heat for quite a while if you want to or serve straight away. It is even better left for a day and warmed up later (like most stews and casseroles).
Serve up in bowls with big lumps of crusty bread.

| | | Re: Banquet Suggestion That is a nice easy recipe which is just about fool proof. It is worth getting decent quality sausages to go in it, you can use belly of pork rather than bacon if you prefer and put in some sliced mushrooms too.
Then again you could go the whole "hog" and make a proper cassolet if you really wanted, but that is taking things a bit far for camping. lol.
Now ... hmm ... for pudding how about making some chocolate brownies to take with you? They are very, very, easy too make and tooth-stickingly delicious.

crusty or seeded batch loaf.
Should easily serve 3

I think I would be inclined to go with your original suggestion of rice pudding in that case and serve it up with a nice fruit compote. Either make your own or buy a jar - Bon Mama is a good make.

Oooooooohhhhh wait wait you could do flambe bananas:
Bananas Flambe
2 bananas, ripe but not soft
butter
3 tbsp brown sugar
dark rum
Take 2 ripe, but not soft bananas and cut in half, then split
lengthwise. Melt a few tablespoons butter in a frying pan over medium heat. Add
2-3 tablespoons brown sugar and stir. Add bananas. Cook until
fairly warm and starting to soften (about 1 minute). Flip bananas
and allow to cook an additional 30 seconds. Add 3 table spoons of dark rum swirl in pan a bit and set light to it. Eat once the flames are out......
you could even have it with icecream as obvously it's going to be cold enough outside that you won't need a freezer........................  |

In a non stick deep frying pan mix 6 eggs, 2 tablespoons of water and a variety of left over items in the fridge i.e. peppers, onions, spring onions, sliced mushrooms (got to have some fungi!) cherry tomatoes, small pieces of cooked bacon, chorizo / ham.
Season with salt, pepper & a little shake of tobasco sauce dried chillies if you like it hot).
Very slowly heat the mixture without stirring for about 30 - 45 minutes. To test if the omelette is ready pierce the centre with a clean tent peg. If it comes out clean and dry ... get those plates ready!
Whilst it is cooking you can enjoy a pre-dinner beer(s)! Serve with the crusty bread.
This is really good with iced sherry! especially the cheap draft barrel stuff
And for desert:
Pancakes with bananas and maple syrup
Make a batch of pancake mix before you set off. Chill and store in a food flask.
Add the smallest amount of oil to the pan.... just for the first pancake that never quite makes it!
Whilst making pancakes - slice bananas in half and then length ways. Wrap each banana with a pancake and dip into maple syrup.
Don't forget to start the day off with luxury porridge!
Soak quick cook oats in milk the night before.
Add a blob of butter and Demerara sugar (about a heaped teaspoon per serving).
Cook for required time.
Stir in a measure? of single malt whisky and top off with double cream.
This is something else!

You can make your own economical stove to cook this meal.
1 candle
Corrugated cardboard
An empty wide tin (I used to use an old round biscuit tin and 2 x 6" candles)
A bar maid's apron just to keep Alan amused
Method:
Roll the corrugated cardboard tightly inside the tin.
Melt the candle wax over the cardboard
Light the cardboard
Support pan using tent pegs ... whatever
This will provide sufficient heat for at least 4 hours

by the way on the recipe front remember that my trangia is a one burner meths stove , and as such doesnt really do heat settings ,it has one setting basically. hot

2 large onions,cutinto 4 halves then sliced fairly fine
1or 2 chillis to taste (with seeds)cut into rings
Fresh ginger peeled and chopped fine (a piece about the size of a mans thumb)
3-4 large cloves of Garlic peeled and sliced fine
1 tablespoon Ground Coriander
1 tablespoon Garam Masala
1 tin Chickpeas
1 tin Chopped tomatoes
1 chicken stock cube
3 tablespoons cooking oil
Big knob of butter (about an inch off a half pound block) it carries flavours
Heat the oil and butter just smoking,add the caraway seed (till it pops not burnt)
add the onions and fry for 2 minutes to lightly brown
add the garlic ginger and chilli fry for 2 minutes (do not burn)
add the spices both lots and fry stirring in just to release the flavour
add the chick peas stir in and heat through
add the chopped tomatoes stir
add half a tin of boiling water and the stock cube
Bring to the boil add either 6-8 skinned chicken thighs or chicken breast meat cubed
bring to the boil and cook in a preheated oven in a lidded container for about an hour
140 degrees in a fan assisted electric oven (160 deg.)
total prep time 20minutes + 1hour
