Which suggests to me that most seafood is pretty tasteless - my own impression! But he does it in a fun way and puts the environmental aspects over very well.
I still have my doubts about his living from the wild - it's fine if a few people do it but what if thousands of people started fishing for pollock or diving for razors? I suspect we'd be back at the present state for these species?  Okay, I'm a pessimist ... basically, we need to eat less. I cook fish once a week (ticking all the correct boxes, of course  ) but have also started cutting down the portion sizes - we never waste any but do we need to eat such large portions. The thing about Red gurnard, is it is a by-catch from trawl netting. I have never bought it for that reason(well in the past). Though you can catch them fairly regularly around Swansea, along with Black Bream.
And i could not believe how big buisness Blue fin was. They are shipped to Japan, were a large fish can sell for £12,000 for one Quote:

The list is a bit tricky to interpret. You need to know the fish, where it was caught, how it was caught, how it was transported, that it's not undersized, whether its provenance can be proved (tagging) ...
For those who didn't get the Graunidan the approved list (as long as not undersized) is:
Sprat
Pollack
Pouting
Mackerel (preferably line caught)
Megrim and witch
Scad or horse mackerel
Black Bream (especially from the Celtic seas)
Grey mullet
Red gurnard
Garfish
Not many of those in Waitrose!

Whitebait
Cod (North Sea)
Hake
Bluefin tuna
Shark and huss (except dogfish)
Skate and rays (escept spotty, cuckoo, starry)

Sea bass

Agree with Julie about the screwdriver on the crab  but you can't beat fresh crab with just a hint of mustard powder and a dash of vinegar....Mmmmmm!
I've not had razor clams before... has anyone else tried them? I seem to recall many a tv presenter trying to lure them out of their sandy holes on the beach by pouring salt into them and 'grabbing' them quick lol!
Watercress soup... Mmmmmm (again!) The simple things are so good eh!

I'll bear that in mind and take a pair of gloves if i ever pulling them out!

Julie | How less harsh can you get? he was killing the thing, personnely I get a large pan of water to a good rolling boil and put the in. trouble is it blows the nippers off.
A fisherman friend of mine recomends put the crabs in lukewarm water then bring to the boil, now I call that harsh.
