| | | Re: River Cottage Gone Fishing There was a booklet in Saturday's Graunidan with a few tips, recipes and a good table showing which fish can be eaten and which should be avoided on ecological grounds.
Apparently there are recipes every day this week. |

| | | Re: River Cottage Gone Fishing I think HFW is a great bloke, shooting pigeon and Rabbits, showing that you can do lots with them, bunny burgers etc. even using a road kill to bait his eel trap.
Great series from the start at river cottage, to the present farm, i hope this fish series is as god as others have been.

Anyone ever been on one of his courses? I've been to an open day at Park Farm and also found the original River Cottage a few years back. |

hoping the fish book is half as good, i've never read cook books as such before, but i'm sure i'll get fully stuck in to this beauty.
already arranging fishing trips for the spring in fact! |

| | | Re: River Cottage Gone Fishing Just a heads up that it's on tonight, he's in Scotland.
"Hugh Fearnley-Whittingstall tackles Britain's appetite for all things fishy by going on a coastal tour of the country sampling its seafood dishes. Hugh visits the Hebrides in Scotland where he learns about how the sea and the food it provides have shaped life on the islands. He also sources shellfish and sustainable salmon, and takes over Skye's chippy with only eco-friendly fish he has caught himself" |

| | | Re: River Cottage Gone Fishing I hope the sea bass was "line-caught and tagged or organically farmed" as it says in the list! Otherwise it's one of the big no-no's - like North Sea cod.
The list is a bit tricky to interpret. You need to know the fish, where it was caught, how it was caught, how it was transported, that it's not undersized, whether its provenance can be proved (tagging) ...
For those who didn't get the Graunidan the approved list (as long as not undersized) is:
Sprat
Pollack
Pouting
Mackerel (preferably line caught)
Megrim and witch
Scad or horse mackerel
Black Bream (especially from the Celtic seas)
Grey mullet
Red gurnard
Garfish
Not many of those in Waitrose!
We should make sure that "none of these pass our lips":
Whitebait
Cod (North Sea)
Hake
Bluefin tuna
Shark and huss (except dogfish)
Skate and rays (escept spotty, cuckoo, starry)
Halibut
Sea bass
Salmon
Eel
(exceptions allowed for farmed ones, of course) Quote:

[So I shall be able to say that someone is as escabeche as a newt! ] Basically it involves briefly frying sardine or mackerel with onions then marinading it in a long list of spices, chillies, garlic, white wine and wine vinegar for 6 hours - warmed gently to eat (or served cold). Shouldn't be lacking in flavour! I'll make a pitta and some green veg to go with it?
I think the problem with fish is that it can get a bit 'samey' so I'm pleased with these recipes. Not all of them are exotic - there's a fish bubble and squeak that looks good! |
