tonight XMAS RIVER COTTAGE at 8 ch4

not sure if a repeat but CHRISTMAS RIVER COTTAGE is on at 8 on channel 4 !!

im hoping its the "medievel feast" one where he does his 10 bird roast ?

one inside another inside another and so on

The bird in a bird trick is much easier than you imagine, Dan.
If you're not squeemish, with only a little help from a sharp knife, get your hands in between breast meat and bone, work down sides, cut through leg and wing joints, (take bones out seperately afterwards from inside) and use help of knife to cut away from sides if spine. cut off parsons nose, discard. Result, one flat bird! Do a larger one the same way, and so on. Do a couple to start with as it takes a while first time, but if it goes wrong, you can layer the meat in a dish and cook it and leave to go cold, serve with salad! So you've nothing to lose!
Leave wing and leg bones in outer bird, or replace them with a firm stuffing, such as sausage meat, use other stuffings to help create a firm shape, I've even put an unsmoked bacon joint in there before now. Butter well, and cover with foil for first half of cooking, and don't forget to make sure the middle gets hot enough to cook, a skewer or two stuck through helps with this. Happy cooking!

Definately going to give it a go after watching that ! thanks for the advice too guys.

i already have plans this crimbo so hopefully next year !

I hope its the squirrel on a stick I had eaten squirrel before but never on a stick so a few days later bagged a couple and had them on a stick....lovely, I do envy his lifestyle
