Particularly good stuffed with a stuffing based on dry mashed potato with onions and lots of fruit and nuts, which soaks up the juices beautifully. We used to have it at Christmas when I was a child, and my father always insisted on giving the goose a name before we cooked it. This used to put me off a bit - I've never really liked eating anything that I've been introduced to socially, like those lobsters that wave at you when they are taken out of the tank.
We have to have duck now, as the friends we share Christmas with won't eat goose. |

(sorry simon) | Ah, now there is a very a good idea. We've got two ducks - I might run a family competition on who most deserves roasting |

Jane | You'll find that tons of fat comes out, think you need a deep tray to collect it all.

We eat mostly vegetarian food but I do still like meat occasionally - I always try to get free range and organic. Our ducks have been reared on what seems like a very good small farm in the South West. So I hope at least that they were happy while they were alive. | | | | | Thread Tools | | | | Display Modes | Linear Mode |
