| | | British Cheeses Well it's vaguely related to wildlife.....grass, cows, milk and all that and I'm sure that where an animal grazes has an affect on flavour etc. I just wondered, as a cheese addict, what your favourite British cheese is?
Stu if you think that cheese isn't wildlifey enough, we could discuss the moulds that grow on it and that is right up Fungijohn's street.
PS Mine favourite is West Country Cheddar....lovely and strong, a right old tongue blisterer.

For cooking: extra mature Cheddar |

Like Jules, West Country Cheddar (mature)
Blue Stilton
And you can not have a pasta meal without proper grated Parmigiano Reggiano (and red wine ).

| | | Re: British Cheeses A blue, a soft, a hard and a runny would be the categoriesI would go for.
Blue: Shropshire blue
Soft: Wensleydale when it is really fresh, with an apple.
Hard: Double Gloucester, but it does need to be a good one. This cheese is very variable, the good is great, the less good is poor.
Runny: Still searching for the right one. |

| | | Re: British Cheeses i used to work on a deli and made a point of tasting as many of the cheeses as possible..... all so i could advise and answer customer queries of course *cough*!!!
I love the mild and creamy organic blue cheese cambozola, i also love applewood smoked - but not for sandwiches, wednesleydale and cranberries is good too. For a strong chedder i would pick tickler. |
