Burns Night

Haggis neeps and tatties at the ready folk's for Burns night on the 25th!


Address to a Haggis.


"Fair fa' your honest, sonsie face,
Great chieftain o the puddin'-race!
Aboon them a' ye tak your place,
Painch, tripe, or thairm:
Weel are ye wordy of a grace

The groaning trencher there ye fill,

His knife see rustic Labour dight,
An cut you up wi ready slight,
Trenching your gushing entrails bright,
Like onie ditch;
And then, O what a glorious sight,

Then, horn for horn, they stretch an strive:
Deil tak the hindmost, on they drive,
Till a' their weel-swall'd kytes belyve
Are bent like drums;
The auld Guidman, maist like to rive,
'Bethankit' hums.

Is there that owre his French ragout,
Or olio that wad staw a sow,
Or fricassee wad mak her spew
Wi perfect sconner,
Looks down wi sneering, scornfu view
On sic a dinner?

Poor devil! see him owre his trash,
As feckless as a wither'd rash,
His spindle shank a guid whip-lash,
His nieve a nit:
Thro bloody flood or field to dash,
O how unfit!

But mark the Rustic, haggis-fed,
The trembling earth resounds his tread,
Clap in his walie nieve a blade,
He'll make it whissle;
An legs an arms, an heads will sned,
Like taps o thrissle.

Ye Pow'rs, wha mak mankind your care,
And dish them out their bill o fare,
Auld Scotland wants nae skinking ware
That jaups in luggies:
But, if ye wish her gratefu prayer,
Gie her a Haggis!"

Hi stewy,that is something i have never had haggis,never realy seen it or tryed it,is it a secret what they put in a haggis ?

Hi just looked at your blue tit video clip,smashing to be able to watch them going about their lives,suprised they are checking nest boxes out already,just hope none of them settle yet as we could still have freezing weather,got febuary to get through yet and if i remember rightly thats normaly when it snows a lot.

Not really a secret but most butchers would have to kill you if they told you their Haggis recipe!

I prefer free range Haggis but they can be a nightmare to catch!!!

Is a turnip orange ?

OR is a swede white ?

Yep, they sell Macsween haggis, very nice indeed.

To a Scot a turnip can be white or orange but someone in England would call a orange turnip a swede and a white turnip a turnip!

Is a haggis offal wrapped in a sheeps tummy ? I mean kidney etc offal not that your native haggis is offal to taste

Also we have orange to mean swede here, so what do you do with your neaps and tatties then ? Roast? boil ? Also is a faggot a mini haggis without a coat on ?

A swede is coloured orange, a turnip is white,
Years ago a haggis was put into the lining of a sheeps stomache just as sausage meat were put into the blood vessels and veins, before sythetic skins were used, the ingredients of the haggis:, it's mostly oatmeal, well spiced,with some Lamb, beef liver, beef heart all well minced, it,s quite a dry dish so I like mine with a bit of vinegar, mmmmmm cant wait.

The best Haggis are the free range caught wild,the easiest way to catch one is to chase it around the hillside in the opposite direction as it has 2 short legs on its right handside of the body so the best idea is to chase it anti clockwise and it cannot balance and makes it easier to catch.

A tumshy is a tumshy , is a neep, in any Scots Vocabulary , but I have never heard of it refered to as a "Rutabaga" and I doubt if many has,

Ive never stopped to wonder what goes into a Haggis or Faggots.. I Love faggots... Always eaten them my kids love them too..with mashed swede & potatoes with garlic butter and cabbage with plenty of black pepper...Are they anything like haggis...?


Also any chance of a bit of Bass in that Haggis Stewy..

Looking forward to seeing a pic of you in your Kilt....dont forget to smile...

Hello Stewy no not snowed in where I am but 30 mins drive south towards Aviemore plenty of snow good for the skiers son had some snow yesterday in West Lothian,wet and cold here.
As to a Haggis, a proper haggis is is made of Spiced Oatmeal with the gizzard and entrails and lites (the offal) of a sheep mince up and stuffed into a sheeps stomach , up here as you say we call a Turnip (neap) orange and largest of the 2 a swede is the small round thing you call a turnip.
You boil Tatties and turnip mash it up and serve with the Haggis and it taste great especially the ones made with sheeps stomach not in the plastic skins

A debate that I've often had before - what are 'neeps'? I remember a discussion in a pub (between a Welshman, a Scotsman and me) and it was clear that everyone attributed 'neeps' to a different vegetable - swedes, turnips or parsnips. I suspect it's just whatever root vegetable is available locally?

After the first couple of nips to drink, you'll not notice what nips you're eating?

i'm celebrating burns night in my wee bothy ,with a few friends,only fitting as our national bard was once a ploughman . after the works done and the fire's roaring,candles lit,then i'm sure the haggis,neeps and tatties will appear,along with our national drink, poems will be read and songs sung. we have a few musicians coming and i have a bhodran,so an evening of "bothy culture" seems to be on the cards.....slainte'
