(I also found a Haggis from 2002 in the bottom of the freezer!) |

As a born and bred Yorkie myself, I take pride in making my own puddings. The recipes posted are all acceptable, just don't be too precious with amounts .. I use the size of the egg as a guide - add about the same amount volume wise in milk, and the same amount size wise in plain flour and you wont go far wrong. Season with salt and pepper to taste.
The secret is to keep the batter cool and then bash it to death (beat well) until bubbles pop on the surface in the bowl .. really heat your fat or oil so that the batter 'fizzes' when you put it in... man, my mouth's watering now lol
Oh, and finely chopped onions and some sage added makes them delicious with pork roasts! |

I had Lamb, cauliflower, spring cabbage, roast potatoes, boiled potatoes, Honey glazed parsnips, Pumpkin, Swede, Chantenay Carrots, Boiled onions, home made mint sauce and then a homemade bread & butter pudding with the crusts left on. & all this time she has been fretting about cooking me a meal bless. Whatever for i can't wait until next time  .
