The victorian nude sketches ARE my mothers in HER bathroom...and no she doesnt wear flat shoes...she just has good taste.
No you cant have real butter it will make your bum look big in whatever your wearing.
I had to wait 2 hours for the flour and yeast to arrive.
I have plenty of my own poppy seed (and yes it is the OPIUM seed not native...opium poppy seed is the one you find on bread)
And my dough is currently "Proving"..will soon be "knocking it down" then prove it again..check me out with the baking lingo dangle doodle.
Im following a Jamie Oliver recipe so excuse me if i return with a fat tongue lishp. |

Your dough is currently in it's Bulk Fermentation stage, then you knock it back, then you shape it, and then you prove it. (Then you bake it and eat it obviously - make sure you leave it to cool long enough before the first cut - a good 30+ minutes is needed or you'll spoil it. Patience!)
Can't rely on that Oliver bloke to give you accurate info.
(My latest loaf is currently proving after having been got to this stage through Autolysing and French Folding, no kneading at all so far- never done this before, quite exciting.)

My hobbies are photography, reading, cross-stitch, tv, gardening & wildlife. I spent 10 years working in computers but these days I spend most of my pc time on this website. In the past I've moderated chat rooms, played online games and co-run two "guilds" within the mmorpgs.
I love books and tv shows that are crime-based, and if there's some medical slant to it too all the better! Guess I'm in the right job hehe

I love to collect things. There is nothing better than going to a boot fair / charity / nik nak shops etc, anywhere that I can buy “nicies” from. I consider “Nicies” to anything made of china, glass etc that I fall in love with. I love to collect what I consider lovely stuff. It is a bit eclectic but in a strange way, it does all match.
Also I collect and read anything to do with bees and honey I am fascinated with them. When I retire, I hope to buy a big house in the country and have my own hives. At the moment I resort to looking at other peoples. My Dad has a friend that keeps hives and we get fresh honey from him. I also like to try honey from all over the country. Heather honey from the New forest has been my latest buy. I also have plenty of honey pots to put it all in most of these brought from a boot fair.
Last thing I collect is Franz Porcelain I love they way that nature is the blended in to become the vase or teapot.
The only down side of this Hobby is dusting it all.

| | | Re: Your hobbies. The recipe i followed was out of jamie olivers book. But i was actually going to ask svenwothisname to give me another as although my loaf was lovely...it is still a little heavy was wondering how to make white bread lighter and fluffier?..
Ill post the jamie recipe tomorrow if you want but i cant be bothered to go back down stairs and find it after just coming up with a cup of tea ha ha...
I know it was flour, water and yeast and honey....ok i went and got book now...
right
30g/1oz fresh yeast or 21g/3/4 oz dried yeast
30g/1oz honey ( or sugar)
625ml/ just over 1 pint tepid water
500g/ just over 1lb strong flour
500g/just over 1lb semolina flour ( if u cant get hold of semolina flour plain flower will do)
30g/1oz salt
To be honest i didnt have semolina flour so just used 2lb of normal bread flower ...or self raising is it?...whatever...the stuff my mum bought home..for bread.
1- dissolve yeast and honey in half the tepid water
2 on large surface or bowl pile up the flour, salt and make well in the centre
3- pour in the dissolved yeast mixture and mix in with fingers centre outwards once all yeast mixed in add the rest of the water and continue to make moist dough...(add more water as some flours are different if needed)
4- kneading...( you kno whwo to do that part)
5- shape...score and leave to prove for the first ime somehwere warm...( this isnt a proving stage apparently...ask sven) ( about 40 mins)..pre heat oven to 225/425
6-once bread doubled in size...kneed and knock all the air out, shape and leave to prove again for another half hour or more.
7- ready for over...dont knock it or slam door....can coat with egg/milk mix for crusty or not for soft...
8- when cooked..tap bottom for hollow sound...leave for half hour min before eating.
thats basically it...id be interested to see svens view on this...to get it lighter ( although it is edible and not doughey) should i have used diff ingredients? or proved it for longer? or cooked it longer?
Dan
