150g butter 1tsp vanilla 75g sugar tin chestnut puree 175g plain chocolate
3tbs strong coffee cardboard and cling film!
1. cream together the butter and sugar
2. add chestnut puree
3. add melted chocolate and coffee
4. make the required shape with the cardboard and line with cling film
5. tip the mixture into this
6. chill overnight
7. turn upside down onto plate you're going to serve on and remove cling film etc
8. decorate and put back in fridge for about 4 hours.
This is quite rich you don't need much!

| | | Re: fave/local foods This one's quite simple and easy and great on a cold night, it's one of my and the hubby's favourites:
Take a chicken breast, cut a pocket into it and fill with roule, boursin or similar.
Lay a slice of mozzarella on the top and wrap the whole thing in in smoked, streaky bacon and cook in the oven for 20-25 minutes.
Serve with home made colcannon: mashed potato with full-fat milk and butter, mixed with cooked shredded savoy cabbage and finely diced red onion.  (haven't got a 'licking the lips' smiley so it'll have to do!)

It is so easy!takes about 5mins to throw the stuff in the machine, and it's perfect. No more bread from supermarkets, and the bread works out cheaper. Wish I had bought one sooner  |

Potatoes
2 Beef stock cubes/OXO
onions.
Spoon of dripping
teaspoon of hot chilli powder
peel and slice potatoes,peel and slice onions ,cut sausages into half.Place dripping into pan with some water not to much about 1/4pint layer up with potato onion and sausage finish with potato,bring to boil then simmer until cooked add chilli and oxo when potato is sort of semi mush but not to mushy serve piping hot.
And enjoy great to beat the winter blues

| | | Re: fave/local foods This is one of the South American treat ones i do; salad, bake and salsa. Salad Papaya 2 oranges cherry toms red onion 2 avocados tin palm hearts juice 1 lime black pepper and passion fruit juice. (chilli flakes optional, i don't use them). Very simple chop, mix, leave for a while to marinate, chill and serve. Bake This is really for chicken but i use quorn because it takes the flavour better. Topping 1ib defrosted frozen sweetcorn 0.25 cup maize flour 1 tsp baking powder pinch salt 0.5 tsp sugar 3 eggs 0.5 tbs brandy 0.25 cup melted butter 2oz strong cheese, grated. filling / bottom layer 1 onion 12oz tasty toms 1tsp oregano bay leaf hot pepper sauce to taste 0.5 cup white wine 0.25 cup stock pack quorn chunks
1. preheat oven to 350F
2. filling fry onion until soft.
3. add rest and simmer for about 10mins. remove bay leaf.
4. topping blitz the frozen corn until smooth
5. Then mix in the rest of the ingredients.
6. Put quorn part in bottom of oven dish and cover with the topping
7. Bake for about 45mins. Salsa tin chopped toms 1tsp chipotole/adobo chilies (makes a difference) 0.5 onion clove garlic 0.5tsp mexican oregano (makes a difference) pinch salt.
1. finely chop onion and garlic and fry in a little oil until soft.
2. Add rest and reduce to salsa texture.
It might not sound it but it's very tasty and goes well with bramble wine (know it's red but it works well) or a light mead.
The type of chilies and oregano do make a difference and I can provide a link if you can't get them - pm me

| | | Re: fave/local foods Since it's nearly upon us..here's one for Imbolg / Candlemass biscuits.
2oz butter 1tbs honey (not strong flavoured one) 1 egg yolk 2oz plain flour 2oz finely ground hazelnuts 0.25tsp cinnamon or allspice 0.25tsp vanilla essence icing sugar or melted plain chocolate.
1. preheat oven to 325F
2. blend butter, honey, vanilla and egg yolk together.
3. then mix in the rest slowly.
4. Roll out and cut into crescent moon shapes.
5. bake for about 10 - 15 mins. and cool.
6. Either dust with icing sugar or coat all or half of them with melted chocolate.
Best eaten in a woodland glade in the moonlight!
