There are just too many species on my "wants" list, however one I'd particularly like to tick off is the spiky looking harvestman Megabunus diadema.

Bee-fly is the answer, followed by Volucella zonaria.

A great idea for a thread! I say it each year when there ID requests come in each spring, that I have yet to see a Bee-fly. Yes, one of them would be nice. Purple Hairstreak butterflies are on my list, and any new Tephritidae flies too. The Southern Green Shieldbug is up there on my list, as are Scorpion flies... each year I say I have never seen one!
Oh, and a nice Cerambycid or Cantharid beetle would do nicely too...
