I'm interested in living a low impact life with a permaculture ethos.
My main interest is the natural larder which at this time of year is overflowing with glorious bounty!
I'm just about to make Rowan Jelly and found this site looking for a recipe of the same.

You will need:
4lb rowanberries
1 pint of water
Sugar
Lemons
Simmer the berries with the water.
When soft strain through a jelly bag. Measure liquid. Put into preserve pan (not copper)
To each pint of juice add 12 oz of sugar (for a sharp jelly) or 1 lb of sugar for a sweeter jelly.
Add the juice of one large or two small lemons. stir in and mix well until the sugar has disolved and bring to the boil.
Boil rapidly until setting point is reached (do not remove scum until setting point is reached.)
Remove scum and bottle as for jam.
Hope this works for you, found it in a very old Marguerite Patten book. |

| | | Re: EcoWorrier In LU1 Thanks all for the warm welcome - I have made the jelly now using 2.5kg Rowan berries, 2.5kg apples and 3l water, I filtered it using my wine filter bag and got a really clear liquid that I added 750g sugar / 1000ml and then boiled to set.
I used baby food jars to bottle and have experimented adding a spoonful of dried mint to a number of these to see what it's like.
I'll try and work out how to uploadf pics of the results to the site and do that later.
I love Marguerite Patten and have a copy of my great grand mothers cook book by her, complete with notes and additional recipes. The dog tried to eat it about 10 years ago but I still have it in a box file for reference!
I'm planning to Bottle Blackberry and Apple today!

Have been using half pint tankards and wine glasses for jams and semi solids, from recycling secondhand shops.
