Walking the dog today round the fields and this was all on its lonesome. Approx 2 inch in size at the time

It would have been useful to peer down into the grass to look at the base of the stem. I think you would have found a volval sac. The hint of pink on the gills, the shape of the cap, the radially fibrillose texture of the cap cuticle and the grassland habitat suggest this is Volvariella gloiocephala.
