I've never seen Oyster fungus this colour in the wild before so can only assume / guess it is Pleurotus flabellatus. Your second fungus is Laetiporus sulphureus as you state.

Growing on a large Beech log also covered in manky Oysters, slime molds, Turkeytail, Ganoderma and another Trametes sp.

What about Panus conchatus? It has the purple colours when young but loses them as it matures.
