You had me excited for a time there  Your Seps (Ceps) are actually Tricholomopsis rutilans I think. They are commonly called Plumbs and Custard because of the yellow gills and wine red coloured cap.
Ceps (Boletus edulis) have pores not gills underneath.

Its been an unbelieveable year for Ceps, still finding them this week even though the weather has now turned cold and I feel that this might be the last of them. Over the last few years I have barely been able to scrape up a few. Anyone else been lucky? |

In my neck of the woods it has been a dreadful year for Boletes (edulis anyway) I normally find enough to eat and keep me with a regular supply right through until they appear again. This year I have dried none frozen none and pickled none  but have had a few meals with fresh. Fortunately last year gave me more than enough dried (frozen and pickled all gone) to see me right.
