The EXIF data for your Pluteus suggests you are using the wrong priority mode, ISO speed and shutter speed. Maybe you forgot to change it after taking that ‘panned’ shot of Dave dashing off to see the Porcelain fungus
You should be looking at Aperture priority (if not manual!), ISO = 100 and using an aperture of F10 – F29 depending on the size of fungus and the amount of background information you require / blur out.
In the case of this Pluteus, you still did a very good job considering where it was!
Next year's visit will sort it

But you've already hit the nail on the head - you'll need a better tripod as your exposure times will be measured in seconds rather than 100ths of a second.
