| | | when it comes to ceps how far gone is too gone? if the pores are turing from white to yellow is that too late or if the are yellow and slowly bruise is that too late?

To be honest I've found them before but never like this(size and frequency), most were 8-10" across the cap around 25 or so in number. There were a few young emerging fruits which will receive my attention in a couple of days. So most were well Past it, some to come and a few for now  . The ones that are turning from white pores to light yellow are as far as i'm willing to try i think.  Smallest in the photo is 2" cap diameter

| | | Re: when it comes to ceps To be perfectly honest, if I had that catch of Ceps, I'd use them all. They look in good condition. Obviously remove the pores (though some don't  ) and check the flesh for any signs of 'abuse'. If they're maggot free and are still relatively firm, they'll be okay!

| | | Re: when it comes to ceps Unbelievable - in all the years I've been trolling the woods and fields round here, I have only ever found one cep - and that was huuuge and way past edible. On the bright side, that find was last year so at least now I know where I am going.
All I need now is some rain  .

| | | Re: when it comes to ceps Thanks guys, I'll try cutting the pores off and see, thankfully there is little sign of infestation i checked in the field so all the damage is slug grazing. We had an extra shower blow in of the north sea this weekend so i think that helped. New spot for me though found by chance I was busy congratulating myself over finding a parasol at last and trying not to eat any of the 1,000,000 spiders i was sharing the wood with when i spotted the first one. |

| | | Re: when it comes to ceps Easiest way to remove the pores Alex is to just sort of 'push' them out with your thumb. Once you get a little movement the should slide right off without risk of damaging the flesh underneath |
