I have read conflicting things, that it is 'choice', but poisonous in raw state, and also that you must boil it and then discard the water, which sounds rather more intimidating than simply 'cook it, the heat will break down the toxins'
Is there a database of mushroom toxins and the effect that heat, boiling, etc., has on them?
Has anyone consumed this species? |

| | | Re: Toxicity of Amanita Rubescens Well I was round at Cybershot's in 2007 (I think) after a foray in the woods and we picked a classic A. rubescens and decided to go for it. I'm not sure if it was parboiled, but I know it was well fried in butter with a little balsamic and was absolutely delicious. I am unsure of the strength of the toxin in its raw state- though I wouldn't imagine it's ridiculously strong otherwise the species would have a more questionable edibility status. |

I have never heared of Amanita rubescens being poisonous when cooked. It is a very often eaten mushroom here in germany and even those who have just a 10-species-repertoire know it often.
It is poisonous in uncooked state, as are many edible mushrooms (Amanita fulva, Boletus erythropus, Leccinum aurantiacum etc.).
Those gastro-intenstinal poisons are in most cases unknown, each group of fungi has different ones. So there is no database over these, as far as I know.

The things are everywhere. | Since first trying them with Nick I regularly, especially this last week or so when so plentiful, collect young fresh buttons/caps of A. rubescens and pop them in the pan: Well cooked (almost caramelised) I think they are one of my favourite edibles.
In the state I choose them there are sufficient obvious characteristics differentiating them from the 'nasties' of the same genus: Not the least being the reddening (blushing) of the flesh and the markedly ribbbed upper surface of the ring (Panther Cap's veil remnants on the cap are pure white as opposed to scruffy grey)
