I would suggest Lactarius rufus for the top one and Lactarius deterrimus for the second . . .

Chris is right, the 2nd is deterrimus. Too slender for deliciosus and no silvery shining on the cap.
The 3rd seems to be Paxillus involutus.

may be you are right, but what doesn't please you with this stipe for Paxillus?
The crowded gills and ther colour, the in rolled cap margin - would suite for Paxillus, but of course wouldn't contradict Lactarius.

If it helps any, the third fungus was at the edge of coniferous woodland but surrounded by Birch and was actually growing at the foot of a Birch tree.

oh yes, it IS a good answer. So often you have the feeling a certain fungus is this or that, but you can't explain why. If someone shows you a fungus on a excursion, you often can say immediately which species. Your brain didn't had the time to go through all characters this fungus has. You just KNEW what it is. So the brain must have a lot of pictures saved and compares that in microseconds with what you see.
Therefore also the other way - "it doesn't look like" - is an argument. Either it really is not this species - or you don't have seen this species in that form and therefor no comparable pictured is stored ...
