| | | Jew's ear fungus I'm pretty sure this is Jew's Ear Fungus - Auricularia auricula-juda but I'm not at all good on fungi! Can someone confirm please, largest lobes about 7cm across.

| | | Re: Jew's ear fungus Cut them off and get 'em eaten. Sliced raw in sandwiches or casseroled they're pretty good. Unusual crunchy cold texture that makes the experience interesting. They look like good edible specimens to me. |

| | | Re: Jew's ear fungus That's an interesting comment because a small number of readily recogniseable edible fungi apparently have different taste characteristics to individual people.
I was cutting up a Beefsteak fungus with a couple of mates and we all thought it tasted differently. It was much too acidic for me but not for others.
I can happily cut a Jews Ear from a branch, chew it up raw and genuinely enjoy the experience. The texture remains during gentle cooking but can get a bit "sloppy" with hot or prolonged cooking. |

Why shouldn't fungi be any different to any other foodstuff in respect of taste? A corn fed chicken tastes different to one fed on fishmeal. For example, Honey Fungus uses multiple species as hosts. I think HF grown on oak might taste different to that grown on sycamore. | | | | | Thread Tools | | | | Display Modes | Linear Mode |
