| | | Re: Chanterelles or False Chanterelles??? I cut the big ones into 3 sections and keep the small ones whole. A shoe box lid is best and 3 days in a warm airing cupboard with an occasional shake is all they need. Then into a tuppaware box with some kitchen towel and some grains of rice.
Great resuscitated in boiled water for 20 mins before use - keep the water, especially if making a wild mushroom rissoto.
