| | | Another unidentified fungus Following on from yesterday's success I decided to venture a little further afield. I bagged about a pound and a half of Ceps, so it was worth the trip, but I also came across this, which looks slightly pink in the photo, but is closer to pure, white, until you touch it, when it immediately goes black. The cap is about 14cm across. At first I thought it might be a Russula, but the stipe is very firm. That blackened as soon as I cut it too.

Yes it is a Russula part of the subgenus Compactae. At that size I would suspect it is adusta. Did it turn black strait away or did it turn a little pink before turning black?

Mal | I think that this probably is Russula anthracina Romagnesi, Mal - so you are right in your comments.
It can in fact only be that if the colour change is to black, with no reddening in between ! Even the only other possible choice i.e Russula albonigra has a slight reddish flush.
The pink gills may not be artefact since there is a Russula anthracinavar. carneifolia as well (but whether or not a good variety I don't know !
