There's a redstart singing in a track mixed by Tom Middleton, though I forget what the track is called I shall have to go find it. Its a beautiful track and makes the redstart sound very tropical!

The obvious one is Beethoven's Symphony No 6 the Pastoral Symphony, which features a cuckoo, quail and Nightingale. Although you would be hard pushed to recognise anything a quail uttered as worthy of Beethovens attentions!
