Growing Hedges?

I've planted Blackthorn, Holly and Dog Rose along a 40ft line at the back of my garden as part of a great fencing scheme.
All planted in Oct- Nov 08, Blackthorn now stands at about 80 - 100cm - Q: when do I begin to strim it to get width rather than height, don't want it to grow higher than width 6ft.
Holly seems slower to grown, standing about 20cm, Q: when will this plant really get started?
Dog Rose has taken very well, Q: again how do I keep this plant under control and not over grow the others.
Q: will all these together make a thick enough structure to kep out dogs etc. Have built nature wooden barrier at base (very impressed
).
