Hi Jason,
I would recommend Sealskinz gloves. I use them for walking throughout the Winter and they are by far the best gloves I've had. Even if they get wet in the rain, my hands stay warm - which is great!
They are windproof and breathable too!
They make some thinner types with 'ultra grip', so I guess these would be OK when you're out with your bino's.
Google them and take a look!
