As a beginner (which is where I am) I would whole heartedly go with aeshna5's first recommendation. The latter I think is for those that have grasped more than the basics of Mothing.

Regarding when they stop flying. They don't. There is always a nucleas of moths (not many) such as the Winter Moth that can be caught in the Winter.
