Ashridge is great for spotting Fallow deer, and occasionally Muntjac. Nearby Ivinghoe Beacon is good for wildflowers (chalk downland varieties) and a few butterflies, if you're interested in those. Close by is Incombe Hole, which gets Ring Ouzels on migration especially in Spring.
The reservoirs at Tring occasionally get interesting birds.
