Re pulses and salt - don't forget that most stock cubes and yeast extracts have a lot of salt in, so go easy on them in your stews or add after the pulses are soft (not easy, logistically, when you're using a slow cooker). Tomatoes are said to make pulses tough as well - don't know how true this is.
