Ah one that I do enjoy has just come to mind and I add it to a veggie Moroccan dish I do where I swap Apricots for Cherries which I think are a very tasty alternative!
A deep Flat Mushroom with the stalk pulled out and chopped up.
A few slices of Red Onion-diced along with chopped stalk add to
Wild mushroom stuffing and scoop that over the mushroom (the mushroom should be placed upside down by the way). Add a little Benneden Sauce to taste, if you like?!
Find a nice Smoked cheese ( I don't like mine all to strong) and grate over the stuffing
simply place in the oven middle shelf 200c for about 20 mins!
Simple
Also goes Nice with Chilli beef and chocolate Bangers
