This is one of the South American treat ones i do; salad, bake and salsa.
Salad Papaya 2 oranges cherry toms red onion 2 avocados tin palm hearts juice 1 lime black pepper and passion fruit juice. (chilli flakes optional, i don't use them). Very simple chop, mix, leave for a while to marinate, chill and serve.
Bake This is really for chicken but i use quorn because it takes the flavour better.
Topping 1ib defrosted frozen sweetcorn 0.25 cup maize flour 1 tsp baking powder pinch salt 0.5 tsp sugar 3 eggs 0.5 tbs brandy 0.25 cup melted butter 2oz strong cheese, grated.
filling / bottom layer 1 onion 12oz tasty toms 1tsp oregano bay leaf hot pepper sauce to taste 0.5 cup white wine 0.25 cup stock pack quorn chunks
1. preheat oven to 350F

filling fry onion until soft.
3. add rest and simmer for about 10mins. remove bay leaf.

topping blitz the frozen corn until smooth
5. Then mix in the rest of the ingredients.
6. Put quorn part in bottom of oven dish and cover with the topping
7. Bake for about 45mins.
Salsa tin chopped toms 1tsp chipotole/adobo chilies (makes a difference) 0.5 onion clove garlic 0.5tsp mexican oregano (makes a difference) pinch salt.
1. finely chop onion and garlic and fry in a little oil until soft.
2. Add rest and reduce to salsa texture.
It might not sound it but it's very tasty and goes well with bramble wine (know it's red but it works well) or a light mead.
