I have seen a couple of Bitterns in the past but hearing the song is a first for me, and I would think many others also.

Bitterns sound just like someone blowing over the top of a milk bottle, it's an uncanny sound. The first time I heard it I thought someone was playing a practical joke.
I was listening to one today at Far Ings on the Humber. Just one low note repeated at intervals three to six times. Perhaps you have a pair of males calling out in your recording?
